Ingredients
  

  • 3 ripe bananas Mashed
  • 1/2 cup 1 stick unsalted butter, melted 113g
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup granulated sugar 150g
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour 188g

Optional add ins

  • 1 teaspoon Cinnamon optional
  • 1/4 cup Walnuts, pecans optional
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir the melted butter into the mashed bananas.
  • Add baking soda and a pinch of salt, and mix.
  • Add the sugar, beaten egg, and vanilla extract. Mix well.
  • Stir in the flour until just incorporated. Don’t overmix; a few lumps are okay.
  • Pour the batter into the greased loaf pan.
  • Bake in the preheated oven for 60-65 minutes or until a toothpick inserted into the center comes out clean.

Muffins

  • Fill muffin cups 3/4 full. Bake until a toothpick can be inserted and comes out clean. 20-25 minutes.
    Makes 12 smaller muffins or 9 larger muffins.
  • Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
