Ingredients:

  • 3/4 cup unsalted butter (softened)
  • 3/4 cup sugar
  • 3 eggs
  • 1.5 tsp peppermint extract
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1 tsp baking powder
  • A pinch of salt
  • 1 cup white chocolate chips

Instructions:

  1. Preheat Oven & Prepare Sheets: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix Wet Ingredients: Cream the butter and sugar, then add eggs, peppermint extract, and vanilla.
  3. Add Dry Ingredients: Combine flour, baking powder, and salt, then mix into the wet ingredients. Stir in the white chocolate chips.
  4. Shape Dough: Divide the dough into two logs, each about 12 inches long. Place them on the baking sheets.
  5. First Bake: Bake for 25-30 minutes until golden brown. Let cool for 10 minutes.
  6. Slice & Second Bake: Slice the logs into biscotti and bake again for 10-15 minutes until crisp.

  • 3/4 cup unsalted butter softened

Instructions
 

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
  • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy. This should take about 3-5 minutes. Add the eggs, peppermint extract and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be thick. Stir in the white chocolate chips.
  • Divide the dough in half. On a lightly floured surface, shape each half into an 8-9 inch long roll, patting down until each is about 1/2 inch thick. Place on the prepared baking sheets, leaving space between them.
  • Bake in the preheated oven for 25-30 minutes, or until the logs are golden brown and firm to the touch.
  • Remove the logs from the oven and let them cool for about 10 minutes. Using a serrated knife, slice the logs diagonally into 1/2 to 3/4-inch thick slices.
  • Arrange the biscotti slices cut-side down on the baking sheets. Bake for an additional 10-15 minutes, turning halfway through, until the biscotti are dry and crisp.
  • Let the biscotti cool completely on a wire rack before decorating.
  • For extra peppermint flavor, you can drizzle melted white chocolate over the cooled biscotti or sprinkle crushed peppermint candies.
  • Melt the white chocolate in a double boiler or (carefully!) use the microwave. For the microwave, place the white chocolate in a medium heat-proof bowl. Melt in 15 second increments, stirring after each increment until completely melted and smooth. Dip each biscotti cookie in the melted chocolate and place back onto the baking sheets. Allow chocolate to set in the refrigerator or at room temperature.

Notes

Storing: Biscotti keep very well! After they’ve cooled completely, store them in an airtight container at room temperature for up to two weeks.
Freezing: Biscotti can also be frozen. Once baked and completely cooled, freeze them in an airtight container or freezer-safe bag for up to three months. Thaw at room temperature before serving.
