Whether you’re baking for a holiday gathering, a family snack, or just because it’s a chilly day outside, this bread is the perfect treat. It’s incredibly versatile, too. Enjoy it as is, or top it with a dollop of whipped cream cheese or a dusting of powdered sugar for an extra special touch.
How to Make It Your Own
While this recipe is already delicious as written, there are a few ways to customize it to suit your taste:
- Nuts: If you love a bit of crunch, consider adding chopped walnuts or pecans to the batter. About 1/2 cup would work well and would complement the spices beautifully.
- Dried Fruit: For added sweetness and texture, you could also mix in some dried cranberries or raisins. This pairs especially well if you’re serving the bread at a holiday gathering.
- Spices: Feel free to adjust the spices to your preference. If you like more cinnamon, add an extra 1/2 teaspoon. You could even experiment with ginger or a pinch of cardamom for a unique twist.
Pumpkin Chocolate Chip Bread
Ingredients
- 1/2 cup melted butter 115g
- 1 cup canned pumpkin 240g
- 1/2 cup honey or pure maple syrup (170g)
- 2 large eggs
- 1/4 cup milk 60ml
- 1 tsp vanilla extract 5ml
- 2 cups all-purpose flour 240g
- 1 tsp baking soda 5g
- 1 tsp baking powder 5g
- 1/2 tsp salt 2g
- 1 tsp ground cinnamon 2g
- 1/2 tsp ground allspice 1g
- 1/2 tsp ground nutmeg 1g
- 1/4 tsp ground cloves 0.5g
- 1/4 cup chocolate chips 45g
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
- In a large bowl, melt the butter. Once melted, whisk in the pumpkin and honey (or maple syrup) until smooth. Then, add the eggs, milk, and vanilla extract, and whisk everything together until fully combined.
- In a separate medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, allspice, nutmeg, and cloves until the spices and dry ingredients are evenly distributed.
- Slowly add the dry ingredients to the bowl with the wet ingredients. Gently mix with a rubber spatula until just combined. Mix in chocolate chips. Be careful not to overmix, as this can make the bread dense.
- Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick or cake tester inserted into the center comes out clean. Keep an eye on the bread to avoid over- or under-baking, which can affect its texture.
- Let the bread cool in the pan on a wire rack for about 15 minutes. Once it’s cooled slightly, remove it from the pan and allow it to cool completely on the rack before slicing and serving.
Notes
-
At Room Temperature:
Once the bread has completely cooled, you can store it at room temperature. Place the pumpkin honey bread in an airtight container or wrap it tightly in plastic wrap to keep it fresh. It will stay soft and delicious for about 3-4 days. -
In the Refrigerator:
If you’d like to extend the shelf life a bit longer, you can store the bread in the refrigerator. Wrap it tightly in plastic wrap or place it in an airtight container. It will stay fresh for up to 1 week in the fridge. Just note that refrigerating the bread may slightly alter the texture, making it a bit firmer.
-
How to Freeze:
To freeze your pumpkin bread, let it cool completely. Once cooled, wrap the loaf tightly in plastic wrap and then in aluminum foil to protect it from freezer burn. You can also place the wrapped loaf in a freezer-safe zip-top bag for added protection. -
Freezing Individual Slices:
If you prefer to freeze individual slices, cut the loaf into slices once it has cooled completely. Wrap each slice individually in plastic wrap and place them in a freezer-safe bag or airtight container. This method allows you to pull out a slice at a time without having to thaw the entire loaf. -
How Long Can You Freeze It?
Your bread will stay good in the freezer for up to 3 months. For the best quality, it’s best to consume it within the first 1-2 months, but it will remain safe to eat for up to 3 months.
