What Is Sourdough Pizza Crust?

Sourdough pizza dough is simply a crust that uses a sourdough starter instead of yeast to leaven the crust. The end product is a crust that is both crispy and chewy!

Can I Use All Purpose Flour Instead Of Bread Flour?

Yes you can! Using all purpose flour will still give you a delicious dough. Although bread flour will help get a chewier and bubblier texture, bread flour has a higher protein content. But if all you have is all purpose, dont let that stop you from making this dough!

Can I Freeze This Dough?

Yes! This dough can be frozen and pulled out to use on pizza night! Make a double batch. freeze and have ready for a quick pizza dinner.

Wrap tightly in plastic wrap and store in a freezer Ziploc bag.

Italian Herb Sourdough Pizza Dough

Equipment

  • Cast iron pan
  • Pizza stone

Ingredients
  

  • 1/2 Cup Sourdough starter (113) Active and bubbly
  • 4 Cups Bread flour (600g) All purpose will work too
  • 1/5 Cups Warm water (354g)
  • 2 Tsp Salt
  • 1 .5 Tsp Basil Fresh or dried
  • 1.5 Tsp Oregano Fresh or dried
  • 1,5 Tsp Parsley Fresh or dried
  • 1.5 Tsp Garlic Fresh or dried
  • 2 Tbsp Olive oil

Instructions
 

  • Add all the ingredients to the bowl of your stand mixer.
  • Using the dough hook, mix on a medium speed until smooth. This could take up to 10 minutes. You can hand knead.
  • Place your dough in an oiled bowl, cover and let rest for about 8 hours.
  • Divide your dough ball into 4 sections.
  • On a lightly floured surface roll dough out to your desired size.
  • Preheat oven to 475℉
  • Place dough onto a preheated pizza stone or preheated cast iron skillet.
  • Top with your favorite pizza toppings.
  • Bake for 10-15 minutes, or until the toppings and crust are browned.

Notes

If you wont be baking your dough after 8 hours of resting, place in the fridge or freezer till needed.
Using a hot preheated pan is ideal, you want the crust to begin baking as soon as its in the pan to get a crisp bottom crust.
You can leave out the herbs, or adjust them to your liking.
