Cranberry Orange Buttermilk Loaf

This Cranberry Orange Loaf is a delightful treat that combines the tartness of cranberries with the citrusy zest of oranges.

Ingredients
  

  • 1 Cup Granulated sugar
  • Zest 1 Orange
  • 1 Teaspoon Vanilla extract
  • 1 Teaspoon Almond extract optional
  • 1.5 Cups All purpose flour
  • 1 Teaspoon Baking powder
  • 1/2 Teaspoon Cinnamon
  • 2 Eggs
  • 1/2 Cup Butter melted
  • Juice Half of your zested orange Save rest for the glaze
  • 3/4 Cup Buttermilk
  • 1 Cup Fresh cranberries chopped

Orange Glaze

  • 1 Cup Powdered sugar sifted
  • 1.5 Tablespoon Orange juice

Instructions
 

  • In a large mixing bowl, mix together sugar, orange zest, vanilla extract, almond extract, flour, cinnamon, baking powder.
  • In another mixing bowl, which together eggs, butter, buttermilk, orange juice.
  • Add your wet ingredients into the dry mixture and mix until just combined. Avoid over mixing. 
  • Gently fold in in the chopped cranberries until evenly distributed.
  • Pour batter in a greased 9×5" loaf pan. 
  • Bake at 350 degrees F for 1 hour or until an inserted toothpick in the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Orange Glaze

  • In a separate bowl, stir together powdered sugar, orange juice. Stir until smooth. It should have a drizzling consistency. Add more orange juice to thin it out or powdered sugar to make it thicker.

Notes

Room Temperature – wrap  loosely in plastic wrap or store in an airtight container for up to 3 days.
Refrigerate – you can cover and store the loaf in the refrigerator for up to a week.
Freezing – cool the loaf completely to room temperature then place in a freezer-safe  bag.  Freeze up to three months.
